Soya Chunks: 1 cup
Onion: 1 medium, finely chopped
Tomato: 2 (pureed)
Green Chilies: 2, slit (adjust to taste)
Ginger-Garlic Paste: 1 tablespoon
Red chili powder: 1 teaspoon (adjust to taste)
Oil: 2 tablespoons
Cumin Seeds: 1 teaspoon
Mustard Seeds: 1/2 teaspoon (optional)
Turmeric Powder: 1/2 teaspoon
Red Chili Powder: 1 teaspoon (adjust to taste)
Coriander Powder: 1 teaspoon
Garam Masala: 1/2 teaspoon
Lemon juice: 1 tablespoon
Salt: to taste
Fresh Coriander Leaves: a handful, chopped (for garnish)
Bay leaf: 1
Cinnamon stick: 1 small piece
Cloves: 2
Cardamom: 2
Fresh cream: 2 tbsp (optional)
Water: 1 1/2 cups
Directions
- Boil soya chunks for 5-7 minutes, drain, and squeeze out excess water.
- Heat oil in a pan, add cumin seeds, bay leaf, cinnamon, cloves, and cardamom. Let them splutter
- Add onions and green chilies, sauté until onions turn golden brown.Add ginger-garlic paste, sauté for another minute. Add the tomato puree, turmeric powder, red chili powder, coriander powder, and salt. Cook until the oil separates.Add the soya chunks and mix well to coat them with the masala.
- Pour in water, cover, and let it simmer for 10 minutes. Add garam masala and fresh cream (optional), stir well, and cook for another 2 minutes.
- Garnish with chopped coriander leaves. Serve hot with rice, chapati, or naan
