For the Soya Chunks:
1 cup Meera Soya Chunks
2 cups water
Salt (to taste)
For the Manchurian Sauce:
2 tablespoons oil
1 onion (finely chopped)
1 bell pepper (finely chopped)
2-3 green chilies (finely chopped, adjust to taste)
2-3 garlic cloves (minced)
1-inch piece of ginger (minced)
2 tablespoons soy sauce
1 tablespoon chili sauce
1 tablespoon tomato ketchup
1 teaspoon vinegar
1 tablespoon cornflour (mixed with water to make a slurry)
Salt and pepper (to taste)
Spring onions (for garnish)
1/4 cup fried onions (store-bought or homemade)
1/4 cup milk (mixed with a pinch of saffron, optional)
2 tablespoons ghee (clarified butter) or oil
Fresh cilantro and mint leaves, for garnish
Instructions:
- Prepare the Soya Chunks:
Boil water in a pot and add a pinch of salt. Add the soya chunks and cook for 5-7 minutes until they are soft and plump. Drain and rinse under cold water. Squeeze out excess water and set aside. - Make the Manchurian Sauce:
Heat oil in a pan over medium heat.Add chopped onions and sauté until translucent.Add garlic, ginger, and green chilies; sauté for another minute.Add the bell pepper and stir-fry for a couple of minutes until slightly tender.Stir in soy sauce, chili sauce, tomato ketchup, and vinegar. Mix well. - Combine Soya Chunks and Sauce
Add the soaked soya chunks to the pan and mix until well coated with the sauce.
Pour in the cornflour slurry and cook for a few more minutes until the sauce thickens. Adjust salt and pepper to taste. - Serve:
Garnish with chopped spring onions.
