Ingredients

  • Soya chunks: 1 cup

  • Butter – 2 tbsp

  • Onion: 1 (finely chopped)

  • Tomato puree – 1 cup

  • Ginger-garlic paste: 1 tsp

  • Cashews – 8-10 (soaked & ground into a paste)

  • Fresh cream – 2 tbsp (optional)

  • Garam masala: 1/2 tsp

  • Salt to taste

  • Turmeric powder – 1/2 tsp

  • Red chili powder – 1 tsp

  • Coriander powder – 1 tsp

  • Kasuri methi (dried fenugreek leaves) – 1 tsp

  • Salt – to taste

  • Water – 1 cup

  • Coriander leaves – for garnish

Instructions:

  • Prepare Soya Chunks:
    Boil soya chunks for 5-7 minutes, drain, and squeeze out excess water.
  • Cook the Masala:
    Heat 1 tbsp butter in a pan, add onions and sauté until golden.
    Add ginger-garlic paste and sauté for a minute.
    Pour in tomato puree and cook until oil separates.
  • Add Spices & Cashew Paste:
    Stir in turmeric, red chili powder, coriander powder, and salt.
    Add cashew paste and mix well.
  • Cook Soya Chunks:
    Add the boiled soya chunks and 1 cup water.
    Cover and simmer for 5 minutes.
  • Final Touch:
    Add garam masala, kasuri methi, and fresh cream.
    Stir well and cook for 2 more minutes
  • Serve Hot:
    Garnish with coriander leaves.
    Serve with naan, roti, or rice.
