  • Soya Chunks: 1 cup

  • Onion: 1 medium, finely chopped

  • Tomato: 1 medium, finely chopped

  • Green Chilies: 2, slit (adjust to taste)

  • Ginger-Garlic Paste: 1 tablespoon

  • Red chili powder: 1 teaspoon (adjust to taste)

  • Oil: 2 tablespoons

  • Cumin Seeds: 1 teaspoon

  • Mustard Seeds: 1/2 teaspoon (optional)

  • Turmeric Powder: 1/2 teaspoon

  • Red Chili Powder: 1 teaspoon (adjust to taste)

  • Coriander Powder: 1 teaspoon

  • Garam Masala: 1/2 teaspoon

  • Lemon juice: 1 tablespoon

  • Salt: to taste

  • Fresh Coriander Leaves: a handful, chopped (for garnish)

Directions

  • Prepare Soya Chunks:
    Boil water in a pot, add a pinch of salt, and add the soya chunks. Cook for 5-7 minutes or until they are soft.
    Drain the soya chunks and squeeze out excess water. You can use a clean cloth or paper towel to help with this
  • Cook the Soya Chunks:
    Heat oil in a pan over medium heat.Add cumin seeds (and mustard seeds if using) and let them splutter.Add the finely chopped onions and green chilies. Sauté until the onions become translucent and slightly golden.Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.Add the chopped tomatoes, turmeric powder, red chili powder, and coriander powder. Cook until the tomatoes soften and the oil starts to separate from the masala.
  • Add Soya Chunks:
    Add the prepared soya chunks to the pan. Mix well with the masala and cook for 5-7 minutes, stirring occasionally.Add salt to taste and garam masala. Mix thoroughly.
  • Finish Up:
    Squeeze lemon juice over the dish and give it a final mix.
    Garnish with chopped coriander leaves.
  • Serve:
    Serve hot with rice, chapati, or as a side dish.
